The Producers
Grown by Wbeimar Lasso and Juliana Guevarra of Finca La Terraza in Vereda Las Águilas, Huila (1,900–2,000 masl).
The Process
This fermented honey Gesha is depulped, then fermented (mucilage intact) in plastic tanks for 48 hours.
After fermentation, the parchment (with mucilage) is spread thin for five days to avoid mold, then piled thicker for an additional 20 days—25 days of sun-drying total. Finally, beans rest 15–20 days before roasting to balance moisture and flavor clarity
